GRETA

High-water content dough mixer

GRETA is our dough mixer ideal for doughs with a hydration equal to or higher than 65%. It is equipped with a timer and inverter, which allows it to reach 13 different speeds ranging from 71 to 257 revolutions per minute of the spiral: 25 percent faster than a first-speed mixer and 30 percent faster than any second-speed mixer. The inverter used in GRETA, which allows the direction of rotation to be reversed to detach the dough from the bowl, was specifically designed to achieve energy savings between 25-30% compared to a conventional kneading machine. The different speeds allow the dough to be oxygenated in the same way as a fork mixer would and thus work with a very hydrated dough.

Strong attention was paid to optimizing the ratio of spiral turns to tank turns, to enable the production of a more homogeneous, more oxygenated dough at the right temperature.

GRETA can be easily programmed by the user; when the program is established it will remain in memory until it is changed. The TS and VE versions of GRETA are equipped with a liftable head to allow easy removal of the dough from the bowl. The VE version also provides a removable bowl. These models in the 30-, 40- and 50-liter bowl versions are equipped with the IKARO head anchoring system with innovative wing shape, which gives the machine greater rigidity and a marked reduction in vibration, leading to longer equipment life.
